Loaded Cheesy Pocket Tacos
These crispy, golden pocket tacos are stuffed with seasoned beef, gooey melted cheese, and fresh toppings. They’re easy to make, incredibly satisfying, and perfect for a quick family dinner, game-day snack, or weekend treat!
Ingredients
1 lb (450 g) ground beef
1 tbsp olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp taco seasoning
½ tsp smoked paprika
½ tsp ground cumin
Salt and black pepper, to taste
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack or mozzarella cheese
8 small flour tortillas
½ cup diced tomatoes
¼ cup sliced jalapeños, optional
¼ cup chopped fresh cilantro
Sour cream, for serving
Salsa or taco sauce, for serving
Instructions
1. Cook the beef
Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2–3 minutes until softened. Add the garlic and ground beef, breaking the meat apart as it cooks.
2. Season
Cook until the beef is browned and no longer pink. Drain any excess grease, then stir in the taco seasoning, smoked paprika, cumin, salt, and pepper. Cook for another 1–2 minutes so the flavors blend.
3. Prepare the cheesy filling
Remove the skillet from the heat. Stir in the shredded cheeses until partially melted and combined with the beef. Fold in the diced tomatoes, jalapeños, and cilantro.
4. Fill the tortillas
Warm the tortillas briefly so they become flexible. Place a generous spoonful of the beef-and-cheese mixture in the center of each tortilla. Fold the sides inward, then fold and roll to create a sealed pocket.
5. Crisp the pockets
Heat a lightly greased skillet over medium heat. Place the taco pockets seam-side down and cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and crispy and the cheese is completely melted.
6. Serve hot
Cut the pockets in half and serve immediately with sour cream, salsa, guacamole, or your favorite taco sauce.

Don’t overfill the tortillas, or the cheesy filling may escape while cooking.
